Skillet-Fried Chicken Recipe

Recipe:

Step 1: Combine flour, matzo meal, salt and pepper and cayenne in large plastic bag or paper bag. Add a few pieces of rinsed and slightly damp chicken at a time and shake to coat. Let sit on parchment paper for 15 minutes.

Step 2: Heat shortening to 365°F (medium-high heat) in large cast iron skillet. Fry chicken 30-40 minutes without lowering heat, turning once or twice for even browning. Drain on paper towels.

Ingredients

1 cup all-purpose flour
1/4 cup matzo meal (optional)
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne
1 (3 lb.) frying chicken, cut up (or use your favourite chicken parts)
1/2 cup vegetable shortening such as Crisco
