
Following the "eat locally" philosophy, Canadian-made canola or pumpkin seed oil replaces olive oil in this recipe.
1/4 cup sweet apple cider
1 tbsp chives
1/2 tsp mustard seeds (optional)
1 tbsp canola oil (or 2 tbsp if not using the pumpkin seed oil, below)
1 tbsp pumpkin seed oil
1 tbsp white wine vinegar
2 tbsp finely chopped chives
Generous pinch salt
5 tomatoes, sliced
Step 1: In a mini food processor, purée apple cider, 1 tbsp chives and mustard seeds. Pour into bowl.
Step 2: Mix in rest of ingredients except tomatoes. Chill for an hour to blend flavours before serving with summer tomatoes.
