
Treat your taste buds to this unique salad.
2 slices stale sourdough bread
2 ripe plum tomatoes, roughly chopped
1 tbsp chopped fresh flat-leaf parsley
1 tbsp fresh thyme leaves
1 tbsp chopped fresh oregano
1 tbsp balsamic vinegar
2 tbsp extra-virgin olive oil
Salt and freshly ground black pepper
Step 1: Soak the bread in a bowl of water for 15 minutes, then drain and squeeze the bread dry. Tear it into small pieces.
Step 2: In a bowl, mix the bread with the tomatoes, herbs, vinegar, and olive oil, season to taste with salt and pepper, and let the salad sit for 2 hours.
Step 3: Stir the salad once more, adjust the seasoning, and serve at room temperature.
