
It's best to make this cheese spread just before serving for the smoothest consistency.
250 g Camembert (or any soft cheese such as Brie, cambozola, Gorgonzola, goat cheese), chilled
2 tbsp heavy cream, 10% fat or higher
1 tbsp finely chopped garnishes such as sundried tomato, olives, or dried fruit
1 tsp finely chopped herbs, such as parsley, thyme, rosemary
Step 1: Carefully slice rind from all sides of piece of cheese and discard. Place cheese in small mixing bowl and let warm to room temperature.
Step 2: Using electric mixer, beat cheese until creamy and fluffy. Gradually beat in cream.
Step 3: Stir or beat in garnishes and/or herbs. Serve immediately with crackers or breadsticks.
Makes 1-1/4 cups
