I have used the clear roaster bags for turkey. I uncover for an hour at the end for bird to brown.
Very moist meat. Never heard of paper bag method.
I didn't put in the bag I used the bag to cover it the same as you would use Foil. I damped the bag first and it worked fine. I didn't remeber any difference so always just went back to faoil wrap.
