Just Awesome! We just had our Christmas dinner - unattended Roast Beef - We are having the turkety tomorrow. The beef was awesome. I used a sirloin roast - about 10 lb. Kitchen smoked us out for the first 30 minutes, but after that - you could smell the delicious beast all day. Couldn't wait to try it - taped the oven so no one would peak. It was just like butter. I highly reccommend the process. Just yummy!:D!!!

I took so long to respond. Having a relaxing Holiday:D No - you don't cover it, but you do get a lot of smoke for the first 1/2 hour.
