I have a batch of banana oat muffins in the oven. One of the recipe reviews that I read suggested replacing the oil with applesauce, so I did that. The batter seemed to have a bit of a bitter taste to it, but I went ahead and put it in the muffin cups and into the oven to bake.
I thought maybe the bitter taste was from the bananas, which had been in the freezer for a while. But no -- the applesauce is bitter. Blech!!!! :hurl:
I tossed the jar of applesauce, and now I'm debating about what to do with the muffins. Are they OK to eat if they taste OK, or should I toss them in the trash regardless??
What a waste of time and ingredients :( Good thing I added raisins and not chocolate chips -- wasting chocolate is just wrong!!!!

The jar hadn't been opened -- but I realized after the fact that it had expired in October 2006. Oops!!
I tried a bite of a muffin when they came out of the oven -- blech!! :hurl: The taste was awful, so I tossed the whole batch :( And I couldn't bake another batch, 'cause I had no more bananas :(
if they aren't finished baking yet...i'd yank them out and toss some brown sugar on top of them and stick them back in the oven. i'd say if the jar hadn't been open it was probably made with tart apples.
they are probably safe to eat. The applesauce may have been made from some tart apples. Give them a try when they come out of the oven. Maybe some icing sugar sprinkled on will take any tartness away.
Is the jar fresh opened and just tasted bitter or was it bad from being open to long. you maybe able to save the muffins if it is just the taste of the applesauce not that it is bad.
