My SIL makes this and claims it is great. I have used it at her house and never knew it was anything other than butter. She takes equal amounts of softened butter and olive oil and whips them until fully mixed puts in a container and stores it in the fridge. it never gets hard like butter and stays a nice spreading texture. She claims it is better for you than pure butter as olive oil is a better choice of oils. I can't imagine it saves anything on cost as olive oil is expensive I just liked the spreading so easy. I have a pound of butter out softening right now will make it up tonight when I get home from work.
