Any ideas for an appetizer I could bring (60 people expected). I don't want anything that needs to be reheated and it should be easy for traveling (2 hrs.). I usually make little pizzas from tortillas, cut in wedges , the recipe was in Homemakers. Thanks for your input.

if you want to cook bacon in the micro until flexible, not crispy, you can wrap a 1/3 0r 1/2 slice of bacon around a water chestnut from a can on a stick/toothpick and add a cherry tomato. Crunchy and the bacon & tomato are so good together. Even add a basil leaf.
WOW, 4.50 for 12, that's expensive. Don't think I have enough for a stand yet but it's sure nice to pick them ,wrap a basil leave around and eat them right there al fresco. The beefstakes are not quite ready they got a bit neglected this year which means, I just ignored them but they are doing o.k.
the deli bar near me sells an assortment of ready made dishes. He cuts the cherries in 1/2 adds a little vinegar & oil dressing, garlic and basil and charges $4.50 for 12 cut in half. Gee you could start a veg & flower stand tehe. with your crop.
when I go out to the garden I eat them as I weed along with the beans. You can always put a bunch of cherries tomatoes in a bowl, add minced garlic and fresh chopped basil and oil & vinegar dressing, just a little to wet them all. Let sit in the frig for awhile covered and take toothpicks with you to spear them. It's so good as an easy appetizer in this heat.
Thanks for your ideas. I have quite a few cherry tomatoes in my garden right now, so I'll make some for the family - what a spoilt bunch, now I even make them appetizers!! But it's still so hot here they might not get anything else to eat, don't want to use the oven! Don't you find too, sometimes in the summer it gets so busy and there is hardly any time to just relax. Beans need to be picked and frozen, herbs dried then DH went berries picking , the neighbour ask if we want some of his plums, our little appletree is full of fruit too but I really shouldn't complain, it's nice to have all that stuff growing!
I have used cubes of ham, piece of pineapple and cheery tomato on a toothpick.
OR
Cocktail Crisps
1 cup butter
8 oz. Kraft Imperial cheese
dash cayenne pepper(about 1/4 tsp.)
1/4 tsp worchester sauce
1 1/2 cups flour
4 cups rice crispies
Cream butter and cheese, add seasonings, beat in flour, add rice kripies. Mix real well.
Make balls on cookie sheet, press down with fork dipped in cold water and bake 15-20 min. Makes 4 dozen.
Serve cold. Delicious and nippy. 1 1/2 times the recipe would give you enough.
you can always skewer the mini bocconcini cheese balls by Tre Stelle on toothpicks with one cherry tomatoe on each stick, sprinkle with thinly sliced basil & serve with an olive oil, balsamic vinegar, salt & pepper dipping sauce ...oh yeah, before Elise comes along & sees this you can use a g**** olive oil...it is good also;):D
actually we've always let everyone take some into there own appetizer plate..crackers would be nice also...or perhaps you could fill little radicchio cups...or if you like the little soup spoons you get in chinese restaurants. They are inexpensive & present nice on a platter all lined up with a scoopful in each..:)
Dy'n2decor8. This sounds yummy, do you serve it with crackers?

I have one I always bring along...similar to antipasto di mare but easier...the only seafood involved is shredded imitation crab.
I use clover leaf brand ( I find it is the nicest tasting), thinly sliced red onion, red pepper, celery, fennel is an option, a few capers...fresh squeezed lemon juice, olive oil, crushed garlic, chili pepper, salt & minced parsely...even non seafood eaters have asked for it again;). Just be sure to add the lemon juice a couple hours before leaving for party.
