I cooked buffalo for dinner tonight the first time for that and it was very good. I marinated it in dark beer rye whiskey onion and garlic salt and pepper. I read that you only cook it rare to med rare so I had a tenderloin and browned it then finished in the oven to med rare served it with sauteed onions. Very tender and very mild taste just like beef. DH bought it in Northern BC when he was on his hunting trip, I would recommend it give it a try.

I too use it in place of beef. I use it in a meat sauce in spaghetti and love the roasts as well. I find it even a bit more flavorful than beef. Use it in wellingtons, salads, etc. Where ever you use beef you can use buffalo. Cook exactly the same way. Just depends on your favorite degree of doneness. Most are raised on local farms too so you can be sure that they are fairly organic. It was pretty big in Red Deer, Alberta, but now that I am back in Calgary I am finding it only at the farmers market. I hope it catches on a bit more. I would love to go to the grocery store and pick it up.

Thanks so much I will definately give it a try the next time I cook Buffalo or any game meat .

Grease Bannock

Amount Ingredient
6 cups Robin Hood All Purpose Flour
2 tb. Baking Powder.
1 ts. Salt.
4 tb. Sugar
dash Cinnamon
1/2 cup Skim milk powder.
3 Eggs
Water (cold)
Vegetable oil

Preheat 1/2 to 1 cup vegetable oil in a frying pan. In a large bowl mix together the flour, baking powder, salt, sugar, cinnamon, and skim milk powder. Add beaten eggs, and enough water to make a soft dough.
With a large spoon drop portions of the dough into the hot vegetable oil. Fry until golden brown and turn to fry other side.

Great for an evening snack served with butter and jam

My late friend used to make it and bring it work for us to snack on sooooooooooooo good. Never made it would love to give it a try. Do I have to cook it over an open fire. Do you have a great recipe.

we substitute buffalo for cow bits all the time...most of the time my family have no clue that they are eating buffalo. But... you have to learn to make proper bannock Jeep if you're going to serve up buffalo steak.. lol

This was my first atempt at buffalo do you cook it the same as beef or is there anything differernt I should be doing. Love to see any special recipes you use Thanks.

1/3 of the fat of beef as well. Buffalo is a healthier choice apparently and I have been cooking with it for years.
