Carrots

I love to cook and I am always looking for new recipes that people have actually tried, rather than on paper. Anyone have any nice recipes for carrots, I have two huge bags and need to use them Thanks in advance:)

something i love to do with carrots for a difference is:
after youve cut them into rounds then boiled them till just tender you drain them. in the pot you used melt 3 tbsp of butter and add 3 cloves minced garlic. once garlic is tender then add the carrots and fry it all together for about 5 min. add salt and pepper to taste
my boyfriend loves it!! :)

Roast them like a chicken ... or roast them with a chicken and potatoes...very yummy. Just clean them and put them in whole - they're so good.

I do a similar thing. After carrots are cooked I add butter, little brown sugar, nutmeg and marmalade and let then glaze up a bit.

I also have made a cream sauce for carrots. Carrot and raisin salad is another idea.

Carrot soup?
carrot cake or muffins?
or glazed with butter & brown sugar:D We aren't huge carrot fans so this is the best I have to offer...the soup is good, especially if you throw in some butternut squash...let me know if any suit your taste:)
