OK, it's that time of the year..... post your favourite Christmas baking recipes :D
And if anyone has a recipe for this, I'll be forever grateful -- no idea what it's called and not even sure what's in it, but it's a no-bake concoction with mini marshmallows, rice krispies, white chocolate, and peanut butter.

Hi again...
itsjustme - I also tried the oreo mini cheesecakes - really good and really easy and I also made the blackforest cake about a week ago for my dh's birthday - his favorite! I used Cherry pie filling instead of the chopped cherries and it was delish!! Alot of work, but really, really good. :p
Inglewood - I didn't try the toblerone fondue, but I'm sure it would be delicious!!!
LTD - Hey I made your pfeffernuesse cookies. HUGE hit! Everyone loved them!!!!!!
I made 2 batches!
Kburgo - I am defineitely going to make you toblerone fudge. Has anyone ever done a toblerone fondue? I made it for friends. I had out a platter of fruit for dipping....it's awesome!
OMG, these are hilarious!! Not baking, but I had to post this -- Cream Cheese Penguins!!
http://allrecipes.com/Recipe/Cream-Cheese-Penguins/Detail.aspx?lnkid=990
I bet you could make the same thing with chocolate balls, maybe a cheesecake-type mixture instead of cream cheese, and.... what could the beak and feet be.... something orange...... orange jujubes?!
I saw that recipe in my Kraft book. Now I know it is very good, thanks to you.lol
Any other ones you've tried from there?
I am compiling my list for a baking get-together next week.
Hi All,
Not sure if any of you get the Kraft cookbook or not, but the holiday one came a couple of weeks ago and I just made the "Toblerone Fudge" - to die for!!! :biglol:
It's so easy - you don't need a candy thermometer or anything.
1/2 cup butter
1/2 cup sugar
3/4 cup evaporated milk
1 400 g toblerone chocolate bar broken into pieces
Line 8" square pan with parchment or wax paper extending the sides over, so its easy to lift out when set.
Place sugar, butter and evaporated milk in large saucepan, bring to full rolling boil for 5 minutes, stirring constantly. Remove from heat, stir in chocolate pieces until completely melted. Pour into pan, refridgerate for 3 hours or until firm. Store tightly covered in the fridge.
SOOOO GOOD!!!!!!!!! :p
jenjen those snowman cookies are so adorable, and very festive for Christmas too! I'll bet you could secure mini donut stacks with that already-made icing in white, and maybe Hershey's Hugs or Kisses chocolates could be hats. You could make a scarf, and even put a cuff on the bottom of the hats iwth the icing too. Just put about 1/2c in a baggie (with food colouring tint if desired) and pipe around the base of hat and where you want the scarf.
I don't do marzipan, but I might try making those with a simple round ball cookie recipe. So cute!
I was thinking that square sounded like a Rocky Road - pulled out an old farm women's cookbook but that didn't fit the description. Oops, just reread that - the cookbook is old.
I never do much baking anymore but I've picked up the ingredients for ingredients to make the first place winner in Chatelaine's first contest for Christmas baking. (November issue) Seriously all these things looked like what my great baker friends would have served 20 years ago.
One of the easiest sweets is cream puffs. I make small & medium size ones. Just fill some with whip cream & dust with icing sugar when I'm ready to serve.
Here's another easy one - mereinge ( I never can spell this - you know what I'm saying right)
3 egg whites - beat till lemon colour
1 C icing sugar - add very slowly
1 tsp vanilla
Beat till stiff
Put small blobs on parchment paper or cut a brown grocery bag to fit your cookie sheet. Start in a 300 degree oven just until they darken slightly. Then bake at 225 for another hour. Turn off oven and leave in overnight.
Put two together with whip cream.
I think I'll make some of these tomorrow - after the gym :D
condogirl......I have never made them that way, I just cover them with powdered sugar and store them in an air tight container and they stay fresh for a long period of time....yummy....i'll be making them today, big bathces of them because I usually give some away to my friends as well.
Pfefferuesse ... We make these every year, but we make a very runny icing (almost like a donut glaze) and dunk each cookie in it and then let them drain off on a cooling rack, so then end up with a very thin coat of icing. Also apparently (according to my mom) Pfefferuesse should be put in an air tight jar and let to "age" for a couple of weeks... I know it sounds kinda gross but they really do taste better, I think the coating of icing protects them.
Glad you like them cathie.......they're a hit even with kids....I guess because they taste like ginger snaps.
so glad you posted the recipe for Pfeffernuesse. i remember eating these as a kid...and they too had icing drzzled over them, some with pink and others with white icing. they were so yummy....i know they'll be a hit in my house this christmas....thanks for sharing.
Inglewood, fruit sugar is icing sugar. After you take out the cookies, prepare the icing sugar in a strainer and shake over the cookies and let them cool off. I have never drizzled icing sugar on them, just the powder stuff.
My whole family loves these cookies and I usually end up making dozens and dozens because by Christmas they will already have devoured most of them. I like them better than the store bought ones, even from the German store they don't taste that great :o
Oh LTD I love Pfefferuesse cookies. I want to try this recipe. Can you explain the fruit sugar to me? How it's made? I remember some drizzled with icing sugar mixture.
These are our favourites over the Christmas holiday. Pfeffernuesse, for those who don't know what they are, are spicy "peppernuts" and a favourite cookie of German origin. Store them in a tightly covered tin to keep them semi-soft.
Ingredients:
1/3 cup light molasses
1/3 cup butter
1 egg beaten
2 cups all-purpose flour
1/3 cup granulated sugar
1/2 teaspoon baking soda
1 teaspoon each cinnamon and ginger
1/4 teaspoon each cloves and nutmeg
1/8 teaspoon each salt and black pepper
Heat molasses with butter, stirring until butter melts; cool to room temperature. Stir in beaten egg. Mix dry ingredients together thoroughly; add gradually, using hands if necessary to blend thoroughly. Shape into 1-inch balls. Place on ungreased baking sheet. Bake in 375* F oven for 10 to 12 minutes. Roll in fruit sugar while warm. Makes about 3 dozen.
This is the whole family's favourite.
This is not exactly what you wanted, but they are no bake and they are delicious.

Yeah, it was a lot of fun :) The kitchen was just the right size for the four of us -- although another oven would have been handy!! We were surprisingly good at keeping out of each other's way :) We stopped at about 12:30 for lunch, and of course chatted throughout the entire baking process :) When we were done at about 5:00, even the dishes were all done and the kitchen was clean :)
I think we're going to do this again next year.
Smoodgie that is a great idea so much better than a cookie exchange. It would be alot of fun getting together and helping each other out. Hope the person had a big kitchen and lots of wine to make it a fun day.
jan, those muffins are hilarious!!! :biglol: They DO look like Santa heads with hats!!
I got together with some friends yesterday to do Christmas baking. We each made two things, and then we all took some of each item (8 items in total). I was done mine in an hour -- it took till almost 5:00 for everyone else to finish, so I floated around the kitchen helping with different things. We ended up making:
Rocky Road Squares
White Chocolate Peanut Butter thingies (don't remember the actual name!!)
Shortbread cookies
Chocolate chip cookies
Chocolate Chip Pecan shortbread cookies
Peanut Butter cup cookies
Fruit cake bars
Chocolate mocha Sugar cookies
The problem is, my hubby wants to eat everything NOW!!! No way will it all last till Christmas!!
This week and next week is me catching up on the baking. I usually make two Christmas fruit cakes, as one is eaten before christmas even arrives, lol! Then I must make gingerbread men for the kids, I'll skip the gingerbread house this year, way too much effort, and no one eats it. Hoping my kids won't notice...
I plan on trying making some cookies, but I am still looking for flop-proof recipes. Cookies and me do not go together. The cookies always spread out so much when baking, as if melting, and then we end up with hard thin dinner plate size cookies, lol. Or the ones that don't melt, don't taste good enough.
So anyone have flop-proof recipes to share?
I thought someone might want to try using my mistake to make Santa muffins with a built on cap. Ice the cap and put in some decorations.
These mini muffins were made in the toaster oven with the convection on. I've had the same thing happen with the regular oven using the convection feature. I know you're not supposed to bake with convection but forgot and stuck the cupcakes in. The ones on the side of the pan work; they blow right over the edge. Just make sure the whole pan is well sprayed with Pam.
I have my Fruit Cakes made and sitting with he rum on them DH keeps asking to try them but they are eally better if they sit for a while like at least 3 weeks. I will put some Brnady on themon Monday and then put the almond paste and ice them on Tuesday. I am not doing much baking but I will make a few old favourites to send to my Dad ie: shortbread and mincemeat tarts so he ahs somehting in case he has company.
i picked up Good Houskeeping yesterday while i was a hockey tournament with ds and i was bored outta my skull...there's a few really good recipes that i wanna try...lil snowmen made outta marzipan...but i'm thinking about making them with you know those white lil donuts...you stack them with toothpicks and then decorate like lil snowmen....i normally don't back for christmas but i would like to and do something this year ...usually the only baking is for the boys to take to school
cathie, that could be the same recipe since Malta and Italy are so close.....that sounds like a delicious dessert.
i found this recipe in the december issue of h&h...i'm thinking it's the same recipe of a "cake/fudge" thingamajinge i recieved as a christmas gift one year when i was in malta. the recipe is iatain, however i'm thinking malta and italy are so close together it could probably be the real thing. anyone have any thoughts???
2blues, that's almost it, but the marshmallows aren't melted. I'm going to check the allrecipes web site -- thanks :)
found this on the allrecipes website. (allrecipes.com)
just like making rice krispy treats:
2 cups rice cereal
2 cups dry roasted peanuts
2 cups miniature marshmallows(melted)
1 cup crunchy peanut butter
2 pounds white chocolate chopped(melted)
combine all ingredients and drop by tablespoons onto waxed paper. Let set until firm. store in airtight container.
if this isn't it...try the allrecipes site and do an ingredient search....I just used the rice cereal and marshmallow and came up with 2 pages.
I haven't started mine yet but will as soon as my DGD goes to her parents....I've been extremely busy with her.
Sorry I don't have the recipe you are asking for.
