These are some of my favorites. I have a couple more ones I like to make but couldn't find my recipe cards...I will repost if I do...hope these help! :)

Nutmeg Logs (these are my favorite )

1 cup soft butter
2 tsp vanilla
2 tsp rum flavoring
3/4 cup sugar
1 egg
3 cup sifted flour
1 tsp nutmeg
1/4 tsp salt

Cream softened butter with the flavorings. Beat in the sugar, then mix in the egg. In a separate bowl, stir the flour, nutmeg, and salt. Mix with the butter/sugar mixture. Shape the dough into snakes about 1/2 inch in diameter, and cut the pieces to 3 inches in length. Bake on a greased cookie sheet at 350 for 12-15 minutes. Let cool on a wire rack. When cooled, frost top and sides of cookies with nutmeg frosting. Make grooves in the frosting with the back of fork tines, and then sprinkle with nutmeg on the logs while the frosting is still moist. They freeze well even frosted.

Almond Cresents

2 cups butter, softened
1 cup icing sugar
4 cups flour
1 cup ground almonds
4 squares BAKER'S Semi-Sweet Baking Chocolate, chopped (optional)
1/2 cup very finely chopped pistachios (optional)

preheat oven to 350°F. Place butter and sugar in large bowl; stir with wooden spoon until well blended. Gradually add flour, stirring until well blended after each addition. Blend in almonds. Shape tablespoons of dough into 2-inch crescents. Place on ungreased parchment or foil covered baking sheets. Bake 12 to 15 min. or until lightly browned. Cool on wire racks.

Melt chocolate over low heat then dip one end of each cooled cookie into melted chocolate; sprinkle with pistachios. Return to wire racks; let stand until set.

NOTE:These are good also just plain without the chocolate dipping or nuts

I find the secret to cutting the baked biscotti logs into cookies is using an electric knife...so much easier than using a regular serrated knife.

In fact, I am off to bake some right now. I make the dough early, freeze it and bake them off closer to the middle of the month.

Hi Fendi....and all
For great cookie recipes check out the Kraft website....you can join up for their FREE magazine by going to kraftcanada.com/join or visit their website at kraftcanada.com/connect.
In this months magazine they had a cookie recipe you could alter to make four completely different cookies (to make pinwheel cookies, sugar cookie cutouts, pecan bars and thumbprint cookies) they also have great no fail recipes for dinner, school lunches and entertaining.
