Coddled eggs are delicious! Butter the coddler, add two eggs, salt and pepper...I like to add chopped chives also. Replace the lid. Into a pot of boiling water, just enough to cover, add the coddlers and simmer for approximately 10 minutes.
HaHa - When I got the gift I thought the coddlers were for jam! Then I saw them in an antique store. OOPS! So now I wanted to try them. Yes - I think these are for slightly poaching - beats me.

quest que c'est? Is this the equivalant of soft boiled? Sorry, as italians they are only known as fried, boiled to the point of being a rubber ball or fritatta:D...
