I have company coming on Monday to stay over night so that means dinner on Monday night. Because I am on W/W I want to make something we can all eat but won't kill my diet. I was thinking of something with Chicken Breasts but I want to make it nice have you ny tried and true recipes that you would serve to company but won't break the bank as far as my points. I think I will make an Angel Food cake with fresh berries and fruit for dessert they can have the whip cream I will pass on that and Shrimp cocktails for appie.

Thanks everyone for the suggestions now just to decide which to use. I will try them all at one time or another but I have to decide for Monday.

1 tsp olive oil, divided
1 small onion, chopped
10oz spinach, fresh
1 tsp lemon peel
1/4 feta cheese, crumbled
1 tsp table salt, divided
1/2 tsp black pepper, divided
1 pound boneless, skinless chicken breast, four 4 oz cutlets
In a large skillet heat one teaspoon oil, saute onion until golden, 5 minutes
Wilt spinach (steam spinach or heat damp spinach over medium heat i n nonstick pan) stir in zest, feta, 1/2 teaspoon pepper. Set aside.
Divide spinach mixture between cutlets. Roll up and secure with toothpicks. Sprinkle with remaining salt and pepper.
In the same skillet, heat remaining oil over medium-high heat. Cook chicken, turning occasionally, until golden brown and cook through, about 10 minutes. Remove toothpicks.

This is my favourtie chicken recipe for guests. It is so easy to make yet it feels special for your guests.
I am making this on the weekend for a dinner party of 8 and I will prepare the chicken in the morning and stick it in the oven when people arrive.
Check it out on the site for recommendations by other cooks before making it since you usually get some good cooking tips.

Chicken Jambalaya
This is a traditional Cajun dish in which rice is used to sop up the rich juices of the stew.
2 tsp canola oil
2 stalks celery, chopped
2 green bell peppers, seeded and diced
2 cloves garlic, minced
1 onion, chopped
1 lb boneless skinless chicken, cut into ½ inch cubes
2 tsp each dried thyme leaves and oregano
1 tsp chili powder
¼ tsp cayenne pepper (optional)
2 cups chicken stock (low fat, low sodium)
1 can (796ml) stewed tomatoes
1 can (540ml) red kidney beans, drained and rinsed
¾ cup brown rice
1 bay leaf
¼ cup chopped fresh flat leaf parsley
Heat oil in a Dutch oven over medium heat. Cook celery, garlic and onion for about 5 minutes or until softened. Add chicken, thyme, oregano, chili powder and cayenne; cook stirring for 5 minutes.
Add chicken broth, green bell peppers, tomatoes, kidney beans, rice and bay leaf; bring to a boil. Reduce heat to low, cover and simmer, stirring occasionally for about 20 minutes or until rice is tender. Let stand 5 minutes. Remove the bay leaf and discard. Stir in parsley before serving.
Makes 4 servings.
Turkey Option: You can use boneless skinless turkey for the chicken.
Seafood Addition: Add 8 oz of small raw shrimp, peeled and deveined during the last 10 minutes of cooking.

Jeep, do you have the cookbook "Eat, Shrink and Be Merry" by the Podleski sisters? There are a lot of great low-cal, low-points recipes in there for chicken. My favorite is "Kickin' Chicken", which is so easy to make. All that's in it is six chicken breasts, 3/4 cup of light peanut sauce (I use President's Choice Blue Menu Memories of Szechwan peanut sauce), 1/2 cup of salsa and a 1/4 cup of chopped basil. You just mix all the ingredients together and pour them over the chicken breasts, then bake them in a 400 degree oven for about 40 minutes. I know it sounds weird with the combination of peanut sauce and salsa but it really is great. There are a ton of other great chicken recipes in this book, too. I heard about it on the Weight Watchers board -- everyone there raves about it.
