We have a standard, drywall box with a gas fireplace in the centre and want to make it look more modern/ minimalist. I have seen several examples in magazines lately where they have given the fireplace a contemporary, concrete look with parging. I think that parging is usually used to skim coat the foundations of the house to make it look smooth. Does anyone know if you can put is onto drywall?

Look into using venetian plaster. There are many sites that show how to do this technique. Parging is usually cementitious. It would have a sand component similar to grout. I'm not sure it would bond to drywall. I'd stick with a lighter gypsum based material.
