I need to find a recipe for an appetizer that is both tasty and very easy to make. I'm not much of a cook, don't really like to do it... (I'm a Kraft Dinner kind of girl..yum!), so it's got to be really easy.
Oh and I'm vegetarian so it can't contain any meat.
Does anyone have a recipe that fits the criteria?
Thanks,
K

These are easy to make & delicious:
Mushroom Rolls
1/2 cup chopped onion
1/2 lb. mushrooms, chopped fine
1/4 cup butter
8 oz. cream cheese
1/2 tsp. Worcestershire sauce
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic
1 loaf of white bread
butter for brushing
Put onion, mushrooms and butter in frying pan. Sauté until soft and onions are clear.
Add cream cheese in chunks. Add next 4 ingredients. Stir until cheese melts. Let stand until completely cooled.
Remove crust from bread. Roll each slice thin.
Spread mushroom mixture on each slice and roll up like a jellyroll.
Brush with melted butter and place on tray to freeze. Store in plastic bag.
To serve, cut each roll into 3 pieces. Arrange on ungreased baking sheet.
Bake in 400° oven for 10-15 minutes until toasted and hot.
Mmmm....that sounds delicious. I love goat cheese. I'll definitely have to try this one at some point!
Thanks for the suggestion.

One appetizer that I've made is with goat cheese, sun dried tomatoes and fresh basil. Again, I don't have a recipe, but it's easy to make. You just cut the log of goat cheese into slices, probably about an inch wide. Lay them out, drizzle with olive oil and if your tomatoes are in oil, use that oil. Slice the dried tomatoes into thin slices and put on top of the cheese slices. Slice the basil very thin and put on the top as well. You can also add some chopped garlic if you like. Put some fresh black pepper on top.
Let this sit for a few hours for the flavours to come together. Serve with slices of fresh baguette.
It's really quite delicious.
Thanks for your suggestions. Both sound easy and I'm all about easy when it comes to cooking.
Dianne: I don't eat fish or seafood. I love animals and can't bring myself to eat any of them.
is very simple & usually loved by those of us who are vegetarians as well as the dieters.
Zehrs has a tasty spinach dip so you don't even have to worry about the dip!!
Do you eat seafood/fish??
I don't have a real recipe for tortilla pinwheels, but they're SO easy to make.
Spread some cream cheese onto a tortilla (plain or flavoured), then sprinkle on chopped red & green peppers, green onion, shredded cheese, sundried tomatoes, and whatever other veggies appeal to you. Roll it all up like a jelly roll, wrap it in plastic or foil, refrigerate it till it's time to serve it, then unwrap it and slice it.
