I made crab cakes today with the leftover crab the boys got. Theya re so simple and so yummy. I have made enough that some have gone in the freezer for a quick snack at a later date.

Both recipes sound so yummy, I'm going to make them as soon as I buy some crabmeat....Thanks for the recipes.

Crab Cakes

When we were in San Francisco we went to the Fog City Diner and had their crab cakes – amazing, both in ambiance and flavor. Here is a slightly modified version.

1 lb. crabmeat
1 egg
1 tsp Worcestershire sauce
dash of tabasco
1 tsp lemon or lime juice
½ cup minced red onion, celery and peppers
1 tsp seafood seasoning
1 tsp parsley flakes
¼ tsp dry mustard
1 heaping tbsp mayonnaise
1 heaping tsp prepared mustard
¼ cup cracker or bread crumbs
2 tbsp olive oil

Mix everything but the crabmeat and olive oil thoroughly. Add the crabmeat last, trying not to break it up. Shape into patties and chill, then sauté in the olive oil. Serves 4.

Serve with lemon wedges and a dressing made from 1 cup mayonnaise, 1 tsp cayenne, and two tbsp sherry vinegar.

Not much of a secret but first you need fresh crab.
1 cup of fresh crab cooked and chilled or canned crab
1 cup bread crumbs or cracker crumbs ( I used Vegetable Thin crackers for flavour)
1 egg
1/4 cup mayo

1 tsp. Worcestershire sauce
1 tsp dry mustard
1/2 tsp salt and ppper

Mix crumbs egg mayo and seasonings. Add meat mix gently but throughly. If to dry ad more mayo. Shape into cakes like small hamburger patties fry in non stick pan with litle oil until brown.
I freeze them and jsut reheat or eat cold or hot so yummy.
