This one is super easy and delicious!
2 slabs of marinating steak or chuck steak
1large onion sliced into rings
couple of cans of diced tomatoes
bayleaf, dried basil, dried tattagon
peppercorns
salt and pepper
chopped mushrooms
skinned raw potato halves
Butter bottom and sides of dutch oven. lay down a bed of onion slices, place steaks upon this, place more onion slices on top. Sprinkle with peppercorns, basil, tarragon, salt and pepper, lay on a couple of bay leaves. sprinkle chopped mushrooms on top. lay potato halves on top of this all and pour the 2 cans of chopped tomatoes over all. Sprinkle with more salt and pepper. Put on lid and bake in slow 325 degree oven for 3 to 4 hours.
I have made this as a company casserole and people absolutely loved it. teenage boys in particular go for this one. And for older people, the meat is so tender it is easy to chew.
You can make variations on this by experimenting
Janet, I don't make casseroles but if you go to www.foodtv.com you'll find tons of recipes that would suit your needs. Good luck with your pot luck :)
this one I used to make on Hockey trip days when there was notmuch time.
1 tin each cream of mushroon soup and cream of tomato ( undiluted)
ground beef about 1 1/2 lbs. cooked with onions garlic and mushroom(drained tin)
macaroni noodles cooked about 1/2 bag
mix everything together stir well to mix add more soup if it looks to dry and place inthe oven to heat right through about 1/2 hour.It makes a good size cassarole and tastes even better the next day. My kids loved it and was very cheap and easy to make.
Chicken Casserole
Diced poached chicken
Diced pimiento (about ¼ cup)
Diced green onion (about ½ cup)
Diced celery (about ½ cup)
Mayo (not Miracle Whip) ½ cup
Sour cream ½ cup
1 can cream of chicken soup
Cooked pasta shells
Let chicken and pasta shells cool to room temperature. Mix all ingredients together and put in a casserole dish. Bake uncovered at 350 degrees for 45 minutes.
Crush potato chip finely and add melted butter. Spread mixture on top of casserole and return to oven for ten more minutes.
Serves 2 really hungry adults.
So you would need to increase it for your family...you could use diced ham or tuna chunks instead of the diced chicken...enjoy!
another easy one with tinned chicken. Costco has a good price on large tins of all white chicken.
Ingredients:
1 - 10 oz. pkg. uncooked wide noodles
4 - 5 oz. cans boned chicken or 2 cups cooked diced chicken
1 - 10 oz. can cream of mushroom soup
1 - 10 oz. can cream of celery soup
1 - 10 oz. can cream of chicken soup
1 - 4 1/2 oz. can chopped ripe olives (I have used frozen baby peas)
1 - 10 oz. can mushrooms, drained
1/2 cup wine or sherry (optional)
1 lb. cheddar cheese, grated
paprika
The low salt soups work best....
Instructions:
Cook noodles and drain. Mix remaining ingredients EXCEPT cheese with noodles. Spoon into a shallow 9"x13" baking dish. Top with grated cheese. Sprinkle with paprika. Bake at 350 F. for 20 - 30 minutes. Cheese should be melted. If you refrigerate this casserole beforehand, let if stand at room temperature at least 1 hour before baking.
Lasagna is easy to do the quick (lazy ) way LOL
Buy noodles "oven ready" and 2 cans/jars spag. sauce. Frozen spinach, Quark cheese or cottage cheese (small curds).
Grease the pan, add some sauce, a layer of noodles. more sauce and all the well drained spinach (squish it down in the collander). to remove the water.
Another noodle layer, more sauce, layer of the cheese, another layer of noodles, more sauce and then top with bought grated mozzarello cheese.
Cover at first with foil...350 oven and then remove the foil about 15 min. before it is done. It takes about 45 in a preheated 350 oven.
:bliss: if you like garlic add more to taste.
I never make casseroles, so no suggestions from here. Check out www.allrecipes.com and type in "casserole" as your search word.
