have any special recipes for squares,cookies or dessert loaves? I need to do some baking for my sister's wedding and I would like to make something special and not the same old ones I always make.

Help please!!

Rhubarb Crumb Squares

Base:

1 1/2 cups flour
1/2 cup brown sugar, packed
1/2 cup chopped pecans
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup butter, softened

Filling:

4 cups chopped rhubarb (fresh or frozen)
1 cup sugar
2 Tbsp. cornstarch
1 tsp. orange rind

In a medium bowl, stir together; flour, sugar pecans, cinnamon and salt. With a pastry cutter, cut butter into flour mixture until it resembles fine crumbs. Reserve 1 cup, press remainder evenly in an 8x8 greased square pan.

In a medium saucepan, stir together rhubarb, sugar, cornstarch and orange rind. Cook over medium heat, stir constantly until thickened, approximately 5 minutes for fresh rhubarb or 15 minutes for frozen rhubarb. Let cool. Spoon rhubarb over base, sprinkle reserved crumbs evenly over the filling. Bake at 350 degrees for 35 to 40 minutes.

These taste just like Reeses Peanut Butter Cups - my DH and his friends love them!!

Peanut Butter Squares

1 1/2 cups smooth peanut butter
2 cups graham wafer crumbs
1 cup butter, melted
2 cups icing sugar

Mix all ingredient together. Put into a 9X13 pan. Pat flat.

Melt 1 pkg. chocolate chips with 2 Tbsp. butter. Spread over peanut butter base.

Refrigerate. Cut into squares. Keep in your fridge or freezer.

I know it's too late for the wedding, but I want to share a few recipes that I used at a recent shower.

Martha Washington Squares

Base:

1 cup butter
2 eggs
2 cups brown sugar
2 tsp. vanilla
3 cups chocolate wafer crumbs
1 1/2 cups chopped pecans

Top:

8 oz. cream cheese, softened
2 Tbsp. butter, softened
3 cups icing sugar, sifted
grated orange peel (1 orange)
2 Tbsp orange juice

In a medium sauce pan, mix together the first 4 ingredients of the base. Bring to a boil and stir constantly for 1 minute.

Remove from heat and add the chocolate crumbs and nuts; stir to mix completely. Press into a 8X8 square pan.

In a mixing bowl, blend together cream cheese and butter, gradually add icing sugar, organge peel and orange juice.

Spread all on chocolate base. Chill and slice into squares.

This is very rich so make small servings. Freezes well.

the lemon bars did get made and they are delicious. Thanks for the recipe! I will use this recipe over and over. It seemed to freeze fine...I tried one after a few hours in the freezer. I am sure it will be fine in a couple of days still. Thanks again!!

The name's kind of lame, but they are absolutely delicious and addictive. And you can freeze them!

Candy Bar Squares

Base:
¾ cup icing sugar
¾ cup butter, softened
2 Tbsp. Whipping cream
1 tsp. Vanilla
2 cups flour

Filling:
2 pkgs. Werther’s Creamy Caramels (the soft ones, not the hard ones!)
¼ cup whipping cream
¼ cup butter, softened
1 cup icing sugar
1 cup chopped pecans

Glaze:
½ cup semi-sweet chocolate
2 Tbsp. Whipping cream
1 Tbsp. Butter
¼ cup icing sugar
1 tsp. Vanilla

In a large bowl, combine all base ingredients except flour; blend well. Stir in flour mix well. If necessary refrigerate the dough for easier handling.

Heat oven to 325 degrees. Press dough into 15x10x1 baking pan. Bake for 15 –20 minutes or until lightly golden brown. Cool.

In medium saucepan, combine caramels, ¼ cup whipping cream and ¼ cup butter; cook over low heat, stirring frequently until caramels are melted and mixture is smooth. Remove from heat, stir in icing sugar and chopped pecans. (If needed, add a few additional drops of whipping cream for a desired spreading consistency). Spread over base.

In small saucepan, combine chocolate chips, 2 Tbsp. Whipping cream and 1 Tbsp. Butter, cook over low heat, stirring frequently, until chocolate chips are melted and mixture is smooth. Remove from heat; stir in icing sugar and vanilla. Drizzle glaze over caramel filling.

Enjoy!

The wedding is in a little over a week but don't worry. I am just happy to have this good recipe for the wedding. The pecan-meringue recipe sounds good too but don't worry if you don't have time to post it. Thanks again!!

actually I've never frozen them...:( good question. The resipe is easy enough for a test run...when is the wedding?
If I get a chance I'll try it...sorry I wish I could offer more advice. Knowing that you need something that freezes well, I'll get my hands on my mom's recipes. she makes a wicked square with a pecan - mirenque topping that freezes beautifully...give me a day or so & I'll post it for you...:)

Those sound really great! I love lemon squares but I have never been happy with the recipe I have used before and this one sounds so much better!!

Have you ever tried freezing them? I forgot to say that I have to travel with all the baking so I was hoping to freeze everything and put it in a cooler to transport for the long trip.

this is my absolute fav..lemon seems to be a good choice for pleasing different palates. Hope you like it....

yield:16
crust:
1 cup all purpose flour
1/4 tsp.salt
1/4 cornmeal
4 tbsp. icing sugar
1/2 cup butter

filling:
4 whole eggs
2 egg yolks
1 cup sugar
4 tbsp.whipping cream
1/2 cup lemon juice
2 tsp.lemon zest
1 tsp. baking powder

preheat oven to 350f
butter bottom of 8"square pan
(i like to line mine with parchment)
combine crust ingredients, cut in butter. you will have course crumbs...

press into the bottom of the pan with your hands.bake for 12 mins.
allow to cool

for the filling using a whisk combine all the filling ingredients well.
pour over crust & bake for 25 minutes or until set.
allow to cool at room temp then chill before cutting...
I like to cut them into bite size squares sprinkle with icing sugar ( before serving) 7 garnish with fruit, either, strawberries, raspberries, or for big parties where time is limited lemon curls....
