In my dream kitchen I would have a walk in pantry and a cold room, overhead cupboards and an island bench with stove and oven built into it. I would also have a pot rack hanging from the ceiling and LED downlights over all the workspaces.
As a contractor myself I recommend you give some thought to the existing limitations of your kitchen and what kind of a budget you want to work with.
Creating an open concept kitchen is by far one of the best ways to go as it increases the efficiency and openness of the space.
I highly recommend you check out this project here http://aryze.ca/the-uplands/ in which I effectively transformed 3 rooms (living room, mud room, and kitchen) into one room with the kitchen, dining room, and closet / entryway all in one space. I like a kitchen with timeless quality and materials, such as solid wood, granite and neutral colours. Door styles should be minimal and hardware should be clean and simple.

Oh, and no popcorn ceiling (horrible stuff and no way to clean it).
If you can believe it, the house I bought has a popcorn ceiling in the kitchen. And they did it themselves! What were they thinking? I want to remove it, but I'm afraid that they were trying to hide some ;)
I totally remodelled my kitchen about a year and a half ago and I love, love, love it except I wish the room was big enough for an island.
A gorgeous backsplash, sleek hardware, a unique faucet and the perfect storage for all my baking supplies!
Oh, and no popcorn ceiling (horrible stuff and no way to clean it).
just thought of more:
- electrical outlets out of sight (under the upper cabinets or embedded in the counter) vs being on the backsplash wall
- a sink large/deep enough to handle large pots and frying pans (so they lie flat and can be soaked if needed)
- surfaces and colours that don't require a clean freak to look nice most of the time. If it can survive a few crumbs and finger prints without them glaring out, that is a good thing
- cork floors (super stuff for kitchens as they are great for noise, standing, and won't cause anything that hits them to break)...ceramic or porcelain or marble would be my last choice as it's hard, cold, can be very slippery, and has grout lines that make cleaning a lot of extra work
- good lighting for working at stove, over sink, over island or counters but that also can be dimmed or used individually when you just don't need a lot of light and want to go for mood.
You know I'm just remembering posting 2 threads years ago here asking what people would like and one was not like in a perfect home. The not like thread got huge as people are really good at figuring out what they never want to have again. Figuring out what is desired isn't always so easy as what seems good on paper sometimes has a dark side that is unknown until you actually live with it.
Drawers, gas stoves , dish washers. I am still thinking of other things to be installed in my kitchen.
Space, space, and more space! I would love room for a large island for food prep and gathering around while entertaining, but alas, in the city, kitchens are usually small :(

- drawers instead of shelves/cabinets for lowers
- two dishwashers (one for the dirty dishes, one for the clean, and less space required for storing them in cupboards that way and less work filling and emptying all the time)
- gas stove
- copper countertops
