Easy..but yummy shrimp recipes??

Hello,

Happy New Year's Eve to you all. We are invited to a neighbor's house party tonight and I've decided to try and make an appetizer of sorts out of two of those frozen shrimp rings. I'm not a big fan of just thawing them out and slapping some seafood sauce in the middle of it and calling it an appetizer. i was thinking maybe something skewered? Grilled? Garlic flavoured? Any ideas anyone??

I have made this appetizer the other day and it was so good I am making it again for tonight’s party. Enjoy.

Approximately 48 appetizers
6 ounces (about 1 cup) diced cooked shrimp
1 cup shredded mozzarella cheese
3/4 cup chopped plum tomatoes (about 21/2 medium)
3/4 cup chopped fresh spinach
1/4 cup chopped scallions
1 tsp. crushed fresh garlic
1 tsp. dried oregano
1 long, thin loaf French bread (about 24x2x1 inches)

1.Combine the shrimp, cheese, tomatoes, spinach, scallions, garlic, and oregano in a mudium-sized bowl, and stir to mix well. Set aside.
2. Slice the bread into 48 (1/2inch) slices. Spread each slice with 1 tbs of the shrimp mixture.
3. Arrange the slices on a baking sheet, and bake at 350F for 12 to 15 min. until the bread is crisp and cheese is melted.
4. Arrange the appetizer on a serving platter, and serve hot.
