When ever I make this I get asked for the recipe. It is easier than it looks. I buy the bags of grated cheese and nuke the chicken so it does not take any time at all.... let me know how they turn out
4 Cups Monterey Jack Cheese - divided in to two 2cup portions
2 19.5 oz cans of enchilada sauce (the only place I can find it is at Safeway and they are 16.5oz)
2 4oz cans chopped green chillies
2 C sour cream the (500 ml size) - divided into two one cup portions
1 tbsp. cumin (I only use a teaspoon)
2 tsp. sugar
8 cups cooked chicken chopped into cubes ( just nuke a whole bunch of chicken breast and thighs)
24 flour tortillas
Turn oven on to 400 degrees
In large bowl mix together 2 cups cheese, I can or jar of sauce, all chillies, ! cup sour cream sugar cumin and chicken
Spray or oil a 9" X13" baking dish
put about a 1/3 cup of filling on each tortilla, roll and place in pan seam side down
Cover with remaining enchilada sauce, dot with sour cream and sprinkle with 2 Cups cheese
Bake for 15 Minutes (or 20)
