One of our family favourites is scalloped potatoes...I am sure I started with a recipe years ago but it has evolved to this: Melt 2-3 tbsp of butter, add sliced or chopped onions, (amt is your preference) Saute for a few minutes while washing enough potatoes to fill pan. Sprinkle 2-3 tbsp of flour over slightly cooked onions, 1 tsp of salt ...cook for a couple of minutes, then slowly add 1 1/2 -2 cups of milk, stirring constantly as it thickens slightly. Start adding sliced potatoes, leaving skins on (or not). Stir every few minutes to coat and bring just to a boil. At this point, transfer to an oven proof baking dish. Dot surface with butter, salt and pepper. Grated cheddar may also be added to the top, Cover with foil and bake at 375 for about an hour. Remove foil and continue baking for another 15 minutes for a golden top. This can be adjusted easily for a crowd...but always start with the same amount of butter/flour...just increase milk, potatoes (salt). These are very creamy and will continue to thicken the longer you cook it.

an old-fashioned recipe that my grandmother and mother both made, and still comfort food for me....

Make a mixture of equal amounts of brown sugar and mustard (regular French's is perfect). Rub all over both sides of pork chops (not thin ones).

Lay pork chops in single layer in glass baking dish. Pour fresh squeezed lemon juice to half-way up chops. Put slice of lemon on top of each chop. Bake in 325 oven for about 40 min (depends on how thick chops are). Check every once awhile and top liquid up with water/lemon juice if necessary.

Serve on rice, with all the liquid from the chops, and a green veg on the side.

Although now neither DS and DD eats pork, they both gobbled this up when they were younger, as did I.

my boys just loved it and so simple. Cooked macaroni noodles ground beef cooked with onions and mushrooms and celery salt and pepper. Mix together with cream of tomato soup and cream of mushroom soup ( do not dilute) put in greased cassarole dish and heat through in the oven sometimes I would grate cheddar cheese on it but most times just plain. So simple fast easy and they loved it. When my Dad comes for a visit he asks me to make it.

My kids loved this and thought they were eating chicken.
cooked elbow macaroni, (depends on size of the dish how much you cook) 1 - 2 cans tuna , 1 can cream chicken soup, 1 can cream mushroom soup.( or celery soup) 1/2 can - 1 can of milk. Minced onion. Frozen green peas. Mix all together in a bowl and pout into a greased casserole dish. Break up potato chips and cover the top with chips Bake 350 uncovered for about 40-45 min. until bubbly. They liked it with more chips on the side and peas. All the amounts are approx.
