i was thinkin' of you today when i was making my canelloni for dinner...if you happen to make too much meat filing like i did today...you can freeze it...even if the meat was defrosted before...once you seaon it with all the ingredients you can re-freeze it...just thought i would let you know seeing as how i forgot to mention it before....that way if you decide to make it..you can take the seasoned meat out of the freezer and it will be ready for you to use...same thing goes for the tomatoe sauce....if you make extra of both...when you get home and everything is defrosted all you have to do is stuff the canellonni or manicotti tubes...sorry i didn't mention it earlier

thanks for the tip...did not know that I can refreeze uncooked meat that has already been defrosted? I am always sooo paranoid about this but suppose it is ok to do so as it has been seasoned?
If ever u have any more traditional Italian recipes that you want to share, just post them for me!
