off the top of my head right now...i was thinking have you tried
italian tomatoe salad....
take some plum tomatoes and cut them into wedges....then thinly slice a red onion...add to the tomatoes...season with salt and dried parsley...then drizzle some olive oil and red wine vinegar....refridgerate and serve as cold as possible...great summer salad...
