You would use a thin set mortar or an adhesive to adhere the stones similar to that used for tile. I would recommend the thin set mortar, due to the irregularity of field stones. As for a sealer...maybe an acrylic one. A silicone product similar to that used to seal grout could be used. I'm not sure which ones are food grade.
