Hoochiemamma just reminded me, although the recipe didn't call for it,
I did add fresh garlic while sauteeing onions.......
When I make French Onion, I make broiled cheesebread with whatever combinations I have in the fridge (usually mozza, real parmesan and a little cheddar) plus garlic and butter, get it a little browned and float that in the soup after serving. No baked onto bowl problem and it's so yummy.

French Onion Soup
1quart of beef bouillon or brown stock
3 med.yellow onions, thinly sliced
3 tblsp butter
1/2 tsp. salt
1tblsp. sugar
2 tblsp. flour
1/4 cup of dry vermouth or cognac (optional)
1 cup of grated parmesan
Pour bouillon or stock in stoneware. Cook onions slowly in butter (about 15 mins) in large covered skillet.Stir occasionally. Uncover and add salt, sugar, flour and vermouth. Stir well. Add to stock in slow cooker. Cover and cook on LOW 6-8 hours. HIGH 3 hours. Before serving top with grated cheese.
Chea, I used vermouth...(luckily there is a martini drinker in the house) and for stock, I used cans of beef broth....only diluting 1 can...spooned soup in bowl topped with toasted french bread, swiss cheese and sprinkled fresh parmesan...put under the broiler til melted.
The best thing about this soup is it stays piping hot. When I made it on the stove, it was always cooling down long before you finished it.
I put remainder in freezer.
Hello Obella, I would like the receipe for that soup done in the crock pot! It sounds wonderful and altho i have never tried that soup, i have heard from many who Love that soup.......Tks.
well, I made it, and it was the best french onion soup I've ever had.
It was simple and it simmered in the crockpot for 8 hours...
ended up using swiss on top, fresh parmesan and threw a little old white cheddar in the bottom...
if anyone wants the recipe-let me know

just checking some other recipes, many types of cheeses are used.
Swiss, Provolone, mozz., just parmesan....
When DS#1 was a teenager he had a job as a dishwasher and to this day he refuses to eat French Onion soup because he fels so sorry for the poor kid in the kitchen tryiong to scrub the burnt on cheese off the bowls. When we go out he won't let anyone at the table order it he keeps reminding them of how hard to it to get off.
I like the grated cheeser mix prepackaged..3 cheeses, provolone, mozzarella and parmesan.
I prefer it from scratch but .....
I also havea fast recpie with Lipton'a onion soup dry mix.
saute in olive oil as many onions as you like plus fresh garlic, and some tyme.
in a pot make the Lipton soup, add onion mixture and simmer until all is tender.
pour in deep bowl, add a slice of toasted french bread or a couple os rusks and top with the cheese, Bake until cheese melt and get a bit brown.
I like lots of onions and make mine thick like a stew lol. :) Do Not add any salt, the dry soup mix is salty.
have only eaten french onion soup with monzarella cheese, and by the way one of my fav soups........when is dinner? lol
