I love them both. If you want a richer tasting tiropita then go with the second one. They both taste delicious.

I have 2 recipes. You can choose which one you like best or make both(ha!).
2 pounds feta (you can use greek feta or the canadian one.)
500 gram ricotta cheese
7 eggs
1/4 bunch fresh dill finely chopped
pepper
NO SALT!!!!!!(feta cheese is very salty)
1 pack of philo
1/2 pound melted butter or more.(the melted butter is for the philo)
preheat oven at 350
In a large bowl break up the feta into tiny pieces using you hands.
Add the ricotta, eggs, pepper and chopped dill. Mix it all up very well using your hands or spoon.
spread out the philo and cut it to size using a very sharp knife or razor blade(I prefer the razor). The philo must be cut to fit the size of the bottom of your baking pan. You can use a rectangular or round baking pan.
You will be using 1/2 of the philo pack to line the bottom first. Place 1 sheet of philo in the pan and brush it with melted butter. Place onother sheet and brush it with butter. Continue the philo and butter until you have used up 1/2 of you philo pack.
Spread the cheese mixture evenly over the philo. Using the remaining 1/2 of the philo spead one sheat over the cheese mixture and brush with butter.Do so until you have used up all the philo.
Before placing it in the oven, cut it into pieces, but make sure you only cut the top layers of philo.Don't go all the way down to the bottom of the pan. I do this because it makes it easier to cut when it comes out of the oven. This is where the razor blade comes in handy.
Bake for 45 min to 1 hour.
recipe #2:
1 pound feta
2 packs of cream cheese softened
1 500g ricotta cheese
1 cup kefalograviera cheese (it's a greek cheese)
6 eggs
2 tbls of bechamel sauce (flour, butter and milk)
1 pack philo
1/2 pound melted butter or more
pepper
follow the same procedure as above

When you say greek cheese pie do you mean tiropita? If so let me know and I'll post it.
