I've been making this for years and everyone loves it.

1 cup butter softened
1 1/2 cups sugar
3 whole eggs
2 cups grated carrots
1tsp vanilla
2 1/2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 cup milk
1/2 cup nuts ( I use walnuts)

icing:
1 phili cream cheese
icing sugar
1 tsp lemon juice

Cream butter, add sugar and eggs and beat until well blended. Add carrots and vanilla and continue to blend with mixer.
In a seperate bowl, sift flour, baking powder, cinnamon, baking soda and salt.
Pour dry ingredients a little at a time into wet ingredients alternating with the milk. Mix until well blended. Add the nuts and bake at 350 until done.

cream cheese icing:
with an electric mixer, cream the cream cheese well. The cream cheese must be at room temperature and very soft otherwise it will be too hard to mix.Add the icing sugar and lemon and continue to blend. I've never realy measured how much icing sugar I use, but if I had to guess, probably 1 cup or a little more.

Ice the cake when it has cooled down.

enjoy!!!!

You posted this for me weeks ago, and only now have a found the time to make it! I want to make it for Fathers Day tomorrow.
I have a few questions though:
What size baking pan do I use?
And for how long must it cook (more or less)

Thanks
Catherine

Sorry I took soooooooooo long to write back, but I haven't visited the forums for a long time. I guess I'm too late for fathers day.

As for the baking pan, it all depends how thick you want the cake to be. I usually make it in a large pan ( about 16''by10'') sometimes even larger and then I cut then into squares. Baking time is about 45 min to 1 hour. Again it depends on your over. Test it with a toothpick after 45 min.

Tell me how it turns out
ps. I never set my oven on convection when baking cakes. Set it on regular bake. I find that cakes turn out better that way.
