[B]Chunky Guacamole[/B]
You can adjust the ingredient to your taste -- add more jalapeno if you like it hotter, don't put in the cilantro if you don't like it, add an extra avocado....
3 medium Haas avocados
2 tablespoons onion
1 clove garlic
1 small jalapeno pepper
1/4 cup cilantro
1/2 teaspoon cumin
2 tablespoons lime juice
Dash of salt
Combine all ingredients except avocados in a bowl. Add one avocado and mash. Dice the two other avocados and add. Combine them into the guacamole, but don't mash them. Dip chips and enjoy :)

Definitely don't mash all of the avocado. That's what's so good about this guac, it isn't (for lack of a better word) pasty. Cut the avocados in half, use a butter knife to cut a criss-cross pattern in the flesh, and then scoop the flesh out with a spoon. Just stir the avocado cubes into the mixture, don't blend them in till they get mashed.
BTW, I like to use a red onion or vidalia onion instead of a standard yellow onion.
Thanks Smoodg. I usually make guac without a recipe...generally just avocados, fresh garlic, olive oil, S & P, and a splash of freshly squeezed lemon or lime juice. That being said...I can't wait to try your recipe. Sounds DEEEEEEELISH!!!!

I love guac!!! Might have to try this myself. But you don't mash all of the avocados? Anytime I have made guacamole before, I pretty much mangled the avocados by the time I got them out of their skins. :laugh:

It IS good!! I didn't think I liked guacamole. Then I made this recipe for a party or something and tasted it, and I was hooked!!
