You don't really need a meat thermometer because you won't be opening the oven at all to check it. I find the roast is so perfect for a crowd beacause the ends of the meat are medium/well and the middle is med/rare so everybody gets a piece they like. We were just left with the med/well pieces after my son's last birthday (we love rare meat) and they were still quite tasty and tender. My oven's lowest temperature is 170 degrees farienheit.
Just another note - I usually don't make a gravy from the roast, mostly because of the time factor with 30 people in my house but buy an au jus mix from Knorr or Maccormicks. I didn't make an au jus this last time and some people really missed it, saying they like to put some gravy on their bun with the beef. It is an easy thing to cook on the stove

I think I'm going to do your Unattended roast recipe)I just have a couple of more questions. SHould I use a meat thermomator? And I have a digital oven and was wondering ....what is the lowest tempreature setting on your oven? so I can set mine on the same temp, thanks again!!
You should have about 8 ounces of meat per person but with half being kids you can get away with less. That is a boneless roast. Include a chocolate fondue with fresh fruit for dessert and that will be a big hit. Kids love it and then they don't get to much in the way of sweets and it is so easy.

I know it sounds like the beef would be very well done but it is not. I think that it is the slow cooking at the low temperature that does it. Of course the beef has to be a larger roast or else it would probably be too well done. That is why this recipe is only for a large group. Between myself, my stepmom and mother in law we have made the beef this way at least 15 times and it always comes out sooo tender. The first time I made it everyone at the party asked how I cooked it and when I explained that it took a total 9 hours everyone looked very worried, like they were going to be eating beef jerky, but when we started to carve it and then when they tasted it they could not believe it was in the oven for 9 hours and was still medium rare and tender. You must, must follow the directions and make sure you tape the oven shut or you will open it just by instinct. The last one I made a few weeks ago was for 20 Adults and it was 12 lbs and there was a little left over for the next day or two. I would think that 9 -10 lb would be plenty especially if there are some little kids. Hope this helps - good luck.

Your recipe sounds delish!!! But I just have one question, how come the roast beef isnt tough and chewy after cooking it for 8 hours and not marinating it before hand? How many pounds should I buy for 20 people?

I always host a birthday party dinner for the family for my two sons. One of the easiest and sooo yummy is a roast beef on a bun dinner. I buy a large sirloin tip beef in a bag from Safeway or Costco and use the unattended roast beef recipe (I will attach it). The beef cooks all day and it is a no fail recipe and always comes out so tender and tasty. I always get compliments on it and it is so easy to make. I buy some fresh buns and serve a couple of salads (caesar, japanese noodle or a mixed greens, a good seasonal salad is a mixed greens with feta, pomagranate seeds and pine nuts) and maybe some baked beans. Sometimes if the group is bigger I may make cannalloni as well. Another option is an appetizer dinner. I make some meat balls, chicken wings, chinese dumplings, veggie platter, mushroom tarts, sausage rolls etc. It is quite different but everyone will get something they like.
Unattended Roast Beef
8 to 14 lbs rolled roast of beef (bones removed)
Preheat oven to 500degrees Farenheit. Sprinkle roast liberally with pepper, salt and garlic powder. Place on a rack in a roasting pan. Roast for 28-30 minutes at 500, then turn oven down to lowest setting. Leave for 8 hours - AND DON"T PEEK!!! Tape oven door so you won't forget. Before serving turn ove to 350degrees for 30 minutes. Guaranteed to melt in your mouth.

I once went to a wedding in Toronto..held in a very cool nightclub, and it was catered by Lonestar..at first we were a bit surprised, but it was delicious.
Lots to choose from...very fun and tasty.
