Hello all,
I am making my daughers christening cake from scratch and I am looking for a white icing recipe that will hold up in warm weather. The reception is taking place in my yard and I need something that can take it. Anyone got any ideas? I don't care if the icing is flavoured, just as long as it is white.

Fondant icing is about the only one I know that will stand up to hot weather. I have been to outdoor wedding in summer and the fondant icing stood up in hot conditions
You roll it out and drape over the cake. It can be done ahead as the fondant keeps the cake fresh underneath. You can buy ready made at a cake/bakery shop. I am sure there are recipes on the Web too for fondant icing. Any icing with butter will melt and decoration slide off the cake.
Mix 1 cup of contact cement into your icing mix and that should do the job. He he!! not only that but it will cement everybodys mouth shut and no one will be complaining about it either.
