Here is my question. I'm not a bad cook but trying a new thing today. I'm making roasted chicken with veggies and stuffing. I am picking up a 5 pound bird and I figure it needs about 2.5 hours cooking time approx. So here are my two questions....do I cover the chicken in the oven with the pot or aluminum foil or nothing? Second question...veggies, when do they go in? potatoes, carrots, onions, and garlic. I'm having dinner tonight, and would totally appreciate your help. I know, I know, not the right section to post in but I'm a little desperate!! ha.

ps. I made my roast chicken according to Ina Garten's recipe (and no I didn't cheat). It turned out AWESOME!!!! You girls/guys must give it a try.

Chicken is roasting as we speak, veggies are now in and cooking, wine chilling, and salad made...so where are you all?? hehehe.

Thanks for your help. Just for the record, while I was waiting for a response this afternoon, I suddenly found myself in home sense and winners (no idea how that happened...) and got myself two pillows, and a lamp! yikes! I am out of control! hehehehe. :D

It may be too late but I had just looked up the same recipe prior to reading your post.
Ina Garten (Barefoot Contessa) swears she has a no fail roast chicken recipe. Google Ina Garten roast chicken recipe. I am trying it tomorrow. Yes you can buy a fresh chicken.

You can cover the bird for half the cooking time like a tent with foil so the skin does not burn. Then the last 1/2 of the cooking time leave off the foil to let the skin brown. You can also par cook the veggies in water and then add them to the roasting pan for last hour or so. The garlic will burn if you add it too soon.
Chicken takes longer to cook when stuffed. Mmmm sounds good.

Yes, you can buy fresh chickens, hopefully your grocery store will sell them. A five pound chicken could take up to 3 hours at 325 º to roast. Add the garlic about an hour before the bird is done. The thermometer should register 185º when inserted into the thigh. Are you roasting the vegetables? If so then then they will take about an hour depending on how large the pieces are.
