i need valentine day cookie recipes

something that can be made in a big batch...and kinda easier to make...i don't want to just go out and get those pilsbury stuff...i want to make them for my kids to take to school...so i need to make like 50 or 60 of them

Hey Jen, give it a try, I used it a few years ago with 6 young kids, and they loved it. AH, well work is crazy, the Ministry has come and gone, and we did well. Just tiiiirreed.
Hoping for a snow day...fingers are crossed..lol.

These minty chocolate cookies would be welcome at a classroom Valentine’s exchange party. You can put them together quickly: the preparation time is just 15 minutes and baking time 15 minutes.

Double Chocolate Mint Cookies
Makes 48 cookies.

175 ml (3/4 cup) butter, softened
375 ml (1 1/2 cups) brown sugar, packed
2 eggs
2 ml (1/2 tsp) mint extract
2 ml (1/2 tsp) salt
500 ml (2 cups) flour
125 ml (1/2 cup) cocoa powder
2 ml (1/2 tsp) baking soda
250 ml (1 cup) chocolate chips

Preheat oven to 160 C (325 F). Grease or line baking sheets with parchment paper.

In large bowl of electric mixer, beat butter and sugar until light and creamy, about 3 minutes. Add eggs, mint extract and salt. Slowly add dry ingredients on low speed, mixing just until incorporated. Stir in chocolate chips.

Drop by spoonfuls on prepared baking sheets. Bake in preheated oven for 12 to 15 minutes or until set. Remove from oven and let cool for 2 minutes on sheets. Remove to cooling racks.

My kids dont have any food allergies at all in their school/daycare. DD#2 takes peanut butter sandwiches like 3 times a week..lol

Cat..that's the joys of living in smallville...up until last year my kids were still allowed to take peanut butter sandwiches to school

Heres one, its easy for the kids

VALENTINE COOKIES

1/2 c. butter
3/4 c. sugar
1 egg
1 1/2 c. flour
1/4 tsp. salt
1 tsp. cream of tartar
1/2 tsp. soda
1/2 tsp. vanilla
1/2 tsp. almond or lemon extract

Cream butter and sugar. Add eggs; mix well. Add dry ingredients and flavorings; mix well. Roll out; cut in shape of valentines. Sprinkle with red sugar. Bake at 400 degrees for 8 to 10 minutes.
Make pink sugar icing; fit 2 cookies together with icing.

How do you manage to take home baked goods to school? At our school it is not allowed, nut allergies etc. :(
The reason being, the baking tray or pan 'could' have come into contact with nuts. All makes sense, but I feel really restricted, because I can't make muffins, scones or brownies for my kids lunch box.

Valentine Cookies

Makes several dozen, depending on cookie size
This recipe makes a lot of cookies, but it can be halved, or you can freeze a portion of the dough for up to three weeks.

1 cup (2 sticks) unsalted butter

2 cups sugar

2 large eggs

4 2/3 cups all-purpose flour, plus more for dusting

1 teaspoon baking soda

1/4 teaspoon salt

1/4 cup buttermilk

1/2 cup pale-pink or white sanding sugar(optional)

Petal dust in pink, orange, and violet tones(optional)

2/3 cup apricot or strawberry jam, slightly warmed (optional)

1. In bowl of electric mixer fitted with the paddle attachment, cream butter and sugar until fluffy, about 4 minutes. Add eggs, one at a time, beating well after each. Sift flour, baking soda, and salt into large bowl. On low speed, gradually add flour mixture to mixer bowl, alternating with buttermilk, until combined. Wrap dough in plastic; chill until firm, 1 hour or overnight.

2. To color white sanding sugar, if using: Place a few tablespoons in a small bowl. Mix in petal dust with a toothpick, a bit at a time, until desired shade is reached. Colored sanding sugar will last indefinitely.

3. Heat oven with two racks centered to 350º. Line 2 baking sheets with parchment paper. On lightly floured surface, roll chilled dough 1/8 inch thick. Cut out hearts using any 1- to 3 1/2-inch heart cookie cutters. If desired, cut centers out of some hearts. Transfer with spatula to baking sheets. Chill for 30 minutes. Sprinkle with sanding sugar, if using. Bake until just golden but not too brown, about 10 minutes. Transfer cookies to rack. Continue with dough; reroll scraps.

4. To make sandwich hearts: Brush bottom heart lightly with jam; cover with a second heart with center cut out; jam will adhere hearts. Fill cut-out area with more jam. Cookies will keep, in an airtight container, at room temperature for 1 week.

Valentine's Cookies Recipe courtesy Gale Gand

1/2 cup butter
1 cup sugar
1 egg
1/4 cup milk
1/4 teaspoon vanilla
Approximately 3 cups flour
2 teaspoons baking powder
Icing, recipe follows
Silver balls
Gold balls
Icing:
2 tablespoons egg whites*
2 cups powdered sugar
Red food coloring

Cream the butter. Add the sugar and mix well. Add the egg, milk and vanilla and combine. Sift together 1 cup of the flour with the baking powder and mix it into the batter. Add some or all of the additional flour depending on how much the dough can handle. Form into a disk, cover in plastic and chill in the refrigerator at least 2 hours. Roll out on a lightly floured surface about 1/4-inch thick. Cut out hearts with various sized cookie cutters and place on a greased sheet pan. Bake at 375 degrees F for 8 to 10 minutes until very light golden brown. Let cool on the pan.
Icing: Whisk together the egg whites and powdered sugar to form a slightly loose icing. It should flow a little bit but not too much. Transfer a small amount to a separate bowl and add a tiny amount of red food coloring to make pink icing. Pipe a rim of pink icing around the edge of the cookie and then fill in the center with white icing, or just pipe decorative designs on the surface. Embellish with silver or gold balls. Let dry and package up in cello bags tied with a ribbon.
