Oooh, that's a good idea, to make little individual biscuits instead of one great big one :) Thanks for sharing that idea :)
That sounds good, and healthy!! Kind of like a big biscuit, eh? (Now how Canadian is that?) I liked the soda bread, too, and thought it was kind of like a big scone, and one day will make it again but divide the dough into small scones - should bake quicker, too. I think that would make a nice brunch item.
I made Irish soda bread on Friday using the recipe that I posted. It came out great, even with the changes I made.....
Used 1 cup pastry flour, 1 cup whole wheat flour, and 1 cup spelt flour.
Added more raisins than the recipe called for.
Added sunflower seeds and flax seeds.
The dough was too wet to knead properly, so I just pushed it around the bowl with my hands, and then put it into a cast iron pan and flattened it out a bit.
It's always good to have some choices - I'll add this to my collection.
