I will look at Costco next week. I will try this.
I have cooked a 10 lb. eye of round roast using that method..very tender. Costco's meat is less expensive by alittle and any I have bought (beef, pork, steaks, chops etc,) have all been tender and tasty.
Yes two roast would cook faster but you would need less time. I also like roasting a capon with a roast pork . YUM But I do not use that method. I am getting hungry here. lol
You can always talk to the butcher and tell them how you are cooking the beef. When I buy them they just look like a big huge hunk of beef in a clear bag (similar packaging to what you would buy a turkey in). I know safeway calls them beef in a bag. The don't cut them there they just get shipped that way to them as a big roast.
The last piece of beef cost me around $65.00 at safeway for a 12 lb roast. I have been told though by my stepmom who always shops at Costco that they are a little cheaper there. I don't have a Costco membership so I don't go there often enough to look a the prices. I was also told by one butcher at Safeway that they can also tie two smaller roasts together to make one big one. That way they cook evenly. I really find some butchers quite helpful, others are no help at all!

I have never used a prime rib but the recipe does say to be boneless and I believe prime ribs do have bones in them. I think you should be ok with a sirloin roast.

I was thinnking of buying Prime RIb instead of the SIrloin tip but was wondering if I should spend the extra money since you say it melts in your mouth anyway, what do you suggest, I cant wait to make this! Thanks again Jodi!
