a couple of hints....the freshly grated parm and romano cheeses - it does make a difference if you use the fresh stuff as opposed to the already grated stuff from the grocer (but it will work either way) and I put my spinach through my mini chopper just to chop it up a little finer.

DIP

8oz. cream cheese softened
3/4 tsp garlic powder
1/4 cup (not packed) freshly grated parmesan cheese
1 tbsp (not packed) freshly grated romano cheese
1tbsp (rounded) very finely chopped sweet red pepper
1 green onion (white and green parts) finely chopped
1/2 package frozen chopped spinach thawed and squeezed dry.
pinch of cayenne pepper (or to taste)
1/2 cup grated medium cheddar cheese

preheat oven to 400. Mix cream cheese, garlic powder, parmesan, romano until softened and well mixed. Add chopped red pepper, green onion and spinach, mix until incorporated. Transfer mixture to an ovenproof dish. Sprinkle top with cayenne and top with cheddar cheese.

Bake for 15-18 minutes or until bubbling around the edges. Remove from oven and allow to set for 5-7 min before serving.

PITA WEDGES

use greek style pita....slice into wedges, spray or brush with a bit of olive oil and bake at 400 for 5min.

also serve with tortilla chips.
