I'm looking for the DOUBLE GINGERBREAD LOAF recipe from the Holiday Issue 2003, page 106, of Canadian House and Home. It's the best! and I have misplaced mine. Double Gingerbread Loaf
1- 2/3 cups all purpose flour
1 1/4 tsp baking soda
1 tsp ground ginger
1 tsp cinnamon
1 1/2 tsp salt
1/4 tsp ground cloves
1 large egg, lightly beaten
1/2 cup granulated sugar
1/2 cup molasses
1 tbsp. grated fresh ginger
2 tsp grated lemon peel
1/2 cup boiling water
1/2 cup vegetable oil
1/3 cup crystallized ginger, cut into 1/4" strips(optional)
Glaze:
1/3 cup icng sugar
1 tbsp lemon juice
Preheat oven to 325
Grease a 5"x9"(1.5L)loaf pan
If using the crystallized ginger, set aside 2 tsp of flour
In large bowl, combine remaining flour with b.soda, ground ginger, cinnamon, salt, and cloves.
Add eggs, sugar, molasses, fresh ginger, and lemon peel all at once and mix well.
Add boiling water and stir until smooth, then add oil and mix well.
Toss crystallized ginger with resered flour, add to batter and mix well.
Pour batter into pan and bake in center of oven for 40-45 min or until tester comes out clean
Cool in pan on rack for 10 min.
Glaze: In small bowl, add lemon juice to icing sugar and stir until combined. Brush over partially cooled loaf.
Let cool completely in pan.
I never have cared for the holiday issue of any magazine. I have lots of others around that time. Sorry.
