I need lamb to go with my potatoes. My DP loves lamb, he is going through some tough times, I want to give him a treat.
The lamb recipe I have found goes like this:
2 - 3 kg boneless lamb leg roast
Rubbed with:
1/2 bunch fresh mint
4 stems rosemary
1/2 cup olive oil
2 tbsp salt
1 tsp black pepper
1/2 cup red wine vinegar
Bake at 450 fpr 20 minutes, reduce to 375 and cook until roast is 160 degrees (1 -2 hours)
What do you think? Any changes? A different recipe? What should I serve with the lamb and potatoes?
Thanks darling! Kisses etc...

I will absolutely cook the lamb with the potatoes! And, I will tell the family I got advice straight from the cow's mouth.
I would just serve a nice green salad, and some rolls, that's it.
The only thing I do, as I mentioned in the previous post is rub flour all over the lamb. It makes for a nice crusty skin. You know that Greeks bake the lamb and potatoes in the oven together don't you. Everything in one roasting pan. That way the juices all flow together with the potatoes, the meat touches the potatoes and vice versa. It's sheer heaven!!!
