Muffin Pan

I just bought a new muffin pan with a non stick coding made by Paderno. I was using Pam spray on my other one and it ruined the pan. It was all gummy like. I made muffins last night and didnt use the spray and some were still sticking. I dont want to spray the pan because of what happened to my other one. Should I use liners for the muffins. Please help .

I have both, non-stick and just plain muffin pans and for the non-stick I've been pretty lucky no peeling of the lining like it happened on previous non stick pans. The plain muffin pan works well for me as well because I use a bit of margarine and then flour on top and shake off excess flour and nothing sticks to it.

Thanks everyone. I don't bake just make muffins. I will use the liners. I always used them before just thought the spary would work just as well. I bought a muffin pan from Paderno thinking that would help since they make great pots and pans. Thanks again.

I don't know if this will help you but I bake muffins a couple of times a week and have found that the best muffin tins I have are the Kitchenaid ones. All of the other ones tend to stick or I had to use the liners all the time. Now I just oil lightly and it's so easy to clean them afterward. It's taken me a couple of years to find the right ones. All of the non stick ones tended to stick! (the Kitchenaid ones are just the regular and not the non stick. )

I forgot to add, after rubbing on the butter, sprinkle some flour on and tap tap the tin, tip excess out. The cake will not stick. happy baking

I gave up on non-stick since I am pretty sure they don't mean muffins or cake or anything else. They all stick, and the coating always flakes off and I don't care how long the warranty it for or how much I've paid.

Meanwhile those little paper cups work great in any kind of pan.

I also never use that spray yuck I can't stand the smell. I will also use the wrapper to rub the tin with but always use liners for cupcakes or muffins,

I never use cooking spray. I cant stand the taste it leaves on the food.
I either rub butter on the tin, for cakes eg, using the wrap the butter comes in. very easy and quick. Or I use paper liners for muffins. You'll be amazed how much better the baking tastes!

I've had that happen with my non-stick cookware too. The more I use the spray stuff the more gummy it gets. I seem to have to buy new cookie sheets every 3-6 months. The "gummy" coating will not come off! With my muffin pan I do use liners & they seem to help.
