I just spoke with our Food Editor and she says that using Cream Cheese in this recipe is completely fine. It will just change the flavour, but in a positive way, since you don't like Goat Cheese.
Cream cheese would be fine in the mushroom crepes instead of goat cheese. I wouldn't use the "light" cheese as it has a higher water content & might make the crepes a little soggy. I made the crepes with the goat cheese (H&H Nov '03) last week for part of my course for a wine pairing dinner party and they were delicious.The gost cheese really isn't pronounced unless you use a lot because of the caramalized onions, mushrooms and balsamic vinegar. Next week I'm making them again and freezing them first. Yum!
