Thanks everyone. Last nights cheesecake was a success. no cracks at all except for the ones DH was making as my 2 layer cake fell over. He is getting coal. ;)
Trying to get an uncracked cheesecake is often an exercise in futility. It's also the reason you rarely see cheesecake without a topping spread across it.
Anyway, there are a couple of things you can try. One is not overmixing. Mix only until the ingredients are incorporated, don't over mix. The other is making sure there is enough moisture in the oven. Cheesecakes are often cooked in a water bath or with a big bowl/pan of water in the oven. One recipe I have says to do the cooking time, turn off the oven (leave the door closed so moisture does not escape) and leave the cake in the oven for one hour. Then it gets covered and cooled at room temp, removed from pan and put in the fridge for the night (or several hours).
Meanwhile you have to think of it as a game. For every cheesecake you get with no cracks you'll have 50 that are.
Thank you so much Jeep. I will definitly do that tonight. I suspected that was the culprit even though I had the fire place on and it was pretty warm in the room. Leaving it in the oven sounds like just the trick. Such a lifesaver. I am responsible for Christmas Eve dessert. No easy salad or dip for me. That is what happens when you RSVP too late. darn it. :D
know better not to have read this on a empty stomach. now i'm CRAVING a slice of cheesecake!!! vanilla bean and macadamia nuts....have to wait for christmas eve dinner. : 0(
With a cheesecake the secret to having it cool without cracking is a very slow cooling. You should leave it in the oven for about 10 minutes after you turn the oven off and just hold the door open a couple of inches so it slowly cools then place it on a wire rack away from any drafts. What has happened to yours is it probably cooled to quickly it may not look as pretty but it doesn't effect the way it tastes and cheesecake is all about taste.
LOL....gee Ontario to Calgary...shouldn't take me too long...DH is always telling me i have a heavy foot...LOL....yep uh huh...not enough into you...yup that's it....enough in ya and you won't give a fiddlers *&^% what the cheescake looks like.....LOL
Come on over, I've already started in on it for breakfast. Since December is a calorie free month I thought it would be okay. Where are you so I know when to put on the coffee. :D I will try again tonight. It is a rum and eggnog cheesecake. Maybe I put too much into the cake and not enough into me. Could that be the problem????
not sure why it does that...but...to save the embarrasement i would eat it so there is no evidence of an opps.... :D ....actually i think they all do that when the cheese settles...like i said not sure why....but what if you put a topping on it....maybe some cherries (yuck!!)...or i just bought a really good cheescake...it was a Turtles Cheescake...now that was yummy!!!....but it had chocolate on it then chopped pecans and then drizzled caramel.......ummmm....what time should i come over.... ;)
edit to add...how long do you think it would take me to get to Calgary!!!!...
