My Mum is coming for lunch tomorrow....

And I have no idea what to make... I was thinking a light summer salad with mixed greens, goats cheese, manderin oranges, red onion, and toasted almonds and a light herb vinnigerte but I dont know what to make for the main course. Maybe a light pasta, or some sort of snadwich, or ummm ok thats it I am out of ideas, PLEASE HELP!

Oh i think my mum and Jen would get along just fine... My mom is still really young (52) and she seems to be going threw her second teenagehood... LOL she loves to go to concerts, drink, and dance!!! LOL

Thanks Ladies, I am now thinking of changing the salad to just mixed greens, spring onions, and cucumber with the same dressing... And then a rosted veggie sandwich on ciabatta bread (red pepper, red onion, portabella mushrooms , and roasted tomatos)with goats cheese ( I am limited on dairy that I can use as my mom is lactose intolorant) and fresh herbs, and maybe some smoked turkey... and a nice white wine...

My mum is leaving for a curise this weekend and will be gone for about 2 weeks so I want to make sure this is a nice send off lunch... Do you think that sounds ok?

Crab Cakes

When we were in San Francisco we went to the Fog City Diner and had their crab cakes – amazing, both in ambiance and flavor. Here is a slightly modified version.

1 lb. crabmeat
1 egg
1 tsp Worcestershire sauce
dash of tabasco
1 tsp lemon or lime juice
½ cup minced red onion, celery and peppers
1 tsp seafood seasoning
1 tsp parsley flakes
¼ tsp dry mustard
1 heaping tbsp mayonnaise
1 heaping tsp prepared mustard
¼ cup cracker or bread crumbs
2 tbsp olive oil

Mix everything but the crabmeat and olive oil thoroughly. Add the crabmeat last, trying not to break it up. Shape into patties and chill, then sauté in the olive oil. Serves 4.

Serve with lemon wedges and a dressing made from 1 cup mayonnaise, 1 tsp cayenne, and two tbsp sherry vinegar.

I have made this many times for a luncheon dish when girl friends come over..it can be served at room temp, which is nice in the hot weather, or of course, warm. You could serve the salad with it as a side, or just serve it after the salad with some nice black olives on the side...

It isn't fussy to make because there's no crust...otherwise sort of quichy.

Maybe some fresh fruit for dessert, or a little trifle with fruit, pound cake or lady fingers, plain yogurt, and a little splash of liqueur...

South Western Frittata

(Serves 2-3)

1 cup peeled diced new potatoes
1 tbsp vegetable oil
1 small onion, diced
1/2 sweet pepper, diced
1 clove garlic, minced
1/2 cup corn
4 large eggs
1/2 cup shredded monterey jack cheese
1 tbsp finely chopped cilantro or parsley
salt and pepper to taste

Heat oil in skillet, and saute potato, onion, sweet pepper and garlic until potatoes are almost cooked. Add corn. In bowl, whisk together remaining ingredients and pour over the potato mixture in the skillet. Lower heat and cook uncovered for about ten minutes or until egg mixture is almost set. Preheat broiler. Place skillet under broiler, about 6-8 inches from heat source, for 2-3 minutes or until eggs are set on top.
If you nerves are good, you can try to flip it over and cook the other side in the fry pan.

If you want to serve it warm, you can do everything up to the broil part before she arrives, then finish it off.
