It sounds as if your friend is maybe trying to learn to cook for himself? It's always hard to cook for just one, but here is a great, easy recipe that he could make just for himself or in larger quantities if he wanted to entertain.

Hot and Sour Soup

1 can President's Choice hot and sour Thai soup (mild)
1 cup of reduced-salt chicken broth
lots of cooked shrimps
minced garlic
finely chopped onion
finely chopped celery
a pat of butter
1 can bamboo shoots
soya sauce
chopped green onion or coriander

Combine the soup and the broth in a saucepan and heat until not quite boiling. In a frying pan, melt the pat of butter and gently saute the garlic, onion and celery until the onion is just soft and a bit see-through. Add them to the soup mixture. Put in the shrimps and the bamboo shoots and just heat until everything is hot, not boiling. Just before serving, add a dollop of soya sauce. Serve in bowls, garnished with the chopped green onions or coriander. It is really good, just with some crusty bread on the side. We have made it for a one-dish meal, or as an appetizer.

Fanny Farmer is my personal favourite and the other if The Joy of Cooking. Both are good basic cookbooks.

"The Best of Bridge" cookbook series is great! I am not sure how many are out now. I have 4-5. Also the magazine Taste of Home or their "Quick Cook" are both very good.

there are various cookbooks available about cooking with just 3or 4 ingredients. they are practical for those just learning to cook and they cover everything from apps to desserts. i'm thinking for someone just learning it wouldn't be too overwhelming.

is a hard cover. It is the Better Homes and Gardens new Cookbook. Jenjen's may be the diet version of mine.

The regular one. The red & white plaid cover. They keep updating it. It's well laid out and easy to follow. I got my first one 35 years ago. I finally replaced it when it became too splattered from overuse. Now I use a plastic cookbook holder.
