in my part of canada you cant buy key lime juice, not sure about anyone else... but i had someone bring me back a bottle from florida and she gave me the easiest recipe...i dont do the baking thing and even i can handle this :laugh:
1 ready made graham cracker pie shell
1 250gr package of cream cheese, softened
1can of sweetened condensed milk
1/4 cup of key lime juice or to taste
mix ingredients together and pour into pie shell and refridgerate
it is yummy and cant get any easier than that :D

Well, I used 3 squeezing techniques -- wooden juicer, small fork, and brute force (squeezing with my hand!!) In the end, brute force seemed to work best. Wonder why key limes have seeds and regular limes don't..... :confused:
The pie is very good :) I went a little overboard with the juice, so it's a bit strong with the lime flavour. But that's OK, I tend to prefer intense flavours :)

Did you squeeze or did you use the dessert fork to help squeeze the juice out? I use a fork to juice lemons or limes. I saw that trick on a cooking show once. I bet you're going to love your pie. Makes me hungry.
Wow, that took a LOT of squeezing!! Heating the little suckers up in the nuker definitely helped make it easier to get the juice out of them. Thanks for the tip :)
Just have to let the pie chill down a bit in the freezer.... can't wait to eat a slice!!
Smoodgie, I saw them too at my supermarket and the best thing to do is to warm up those little limes and try rolling them a bit as well and you'll be amazed how much juice you'll get out of them :)
I was at Farm Boy yesterday and saw bags of key limes. Man, those things are little!! Anyway, I thought of your recipe right away and decided to buy a bag and make the pie :)
I suspect it'll take a while to squeeze all the juice out of those little suckers. I hope it's worth the effort!!
janinvan.....yes that is what my girlfriend normally did, using the real keylimes....and yes when that bottle of juice sitting there, it sure does make it handy :laugh:

janet - you can buy a bag of key limes at the superstore. Wash them well in warm soapy water and rinse well. You don't actually have to do the washing thing - I just do that with all fruit. Warm them in the microwave for about 45 seconds. Cut off the end of the lime with a sharp knife then a small stiff dessert fork in and twist to get the juice. It takes a few minutes but the flavour is so much better than a regular lime or bottle of lime. Naturally if I had a bottle of real key lime I'd be going that route too.
I never knew that there's a difference between limes and key limes. You learn something new every day!!

chea i didnt get to you with an answer....thank you for helping out inglewood...i have heard that you cant get it anywhere in canada....and i think it would be yummy with lemon or lime juice as well....just add enough to the flavour you like....easy for sure chea, as this cat does not bake :laugh:

Key Lime is different than lime. I haven't used it so I am not sure if you can get it here in Canada. You could change the flavour to lime or lemon. I am sure it would work but it will be different than key lime.
hello janetc, i was just wondering if "lime juice" is that the same a "key lime juice" if so i know i can get that at my store! :confused:
