my recipe calls for 1 cup PB also and I add choc. chips. Yum like Reese's PB cups.
Here's a recipe I tried yesterday and the family loved them.
1/2 cup unsalted butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp nanilla extract
1/2 cup peanut butter (smooth or crunchy)
1 1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
preheat oven to 350. Cream together butter and sugars until pale and fluffy. Beat in egg and vanilla. Stir in peanut butter. In a separate bowl, combine flour, baking soda and salt. Add to peanut butter mixture and blend in. Drop by tablespoonfuls onto an ungreased cookie sheet and crisscross mark them with a fork. Bake for 9 to 11 minutes, untill cookies start to colour around the edges.
makes about 2 dozen.
ps. I accidently used 1 cup peanut butter instead of 1/2 cup and they tasted wonderful.

1 cup light brown sugar
1 stick butter, softened
1 egg
1 teaspoon vanilla
1 tablespoon milk
1 1/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup uncooked rolled oats
1 cup raisins, soaked for 10 minutes in hot water and drained
Preheat oven to 350 degrees. In a large bowl, cream together the brown sugar and butter. Mix in the egg, vanilla and milk. Stir in the flour, baking powder and soda and salt until well combined. Stir in the oats and the raisins. Grease a cookie sheet and drop batter using a spoon. Bake for 8 - 10 minutes or until golden brown.
as for peanut butter cookies...i usually use the recipe on the Kraft PB label...sorry
