Ok Gals (and the scattered man that pops by from time to time.. :laugh: ) this is the most amazing Spinach Salad dressing recipe I've ever come across...warning however...it is SO NOT LOW-FAT!!!!! :biglol: :biglol:
This works best on a simple spinach salad of spinach, red onion, sliced mushrooms and chopped hard-boiled eggs.

Hot Bacon Dressing

6 slices bacon crisped and crumbled
1/4 cup hot bacon fat (hehehe)
1/4 cup green onions sliced
1 teaspoon tarragon
1/4 cup sugar
1/4 vinegar
1/4 cup water
2 teaspoons cornstarch (dissolved in 1 tablespoon water)
salt and pepper to taste

In a saucepan, over medium heat, combine bacon fat, sugar, vinegar, water, tarragon and green onions. Stir in cornstarch and water mixture; conitnue stirring till dressing thickens. Add crumbled bacon and season to taste. Ladle over individual salad servings.

that last statement there Mel, is EXACTLY what I was thinking when I read the recipe! Including the 'who cares' part:D Us Polish chicks like our bacon fat:)

I generally only use this recipe once a year..when we harvest our first little bit of baby spinach from our veggie garden...but I bought some organic (yeah..whatever) baby spinach at the supermarket on Monday..and had it for dinner that nite with a HUGE steak on the BBQ!! OMG..it has to be the yummiest thing ever!! The thing is..the dressing is almost sooooo bad that it counteracts the goodness of the spinach.. :laugh: but who cares???

Yikes, that's a lot of bacon fat!!!! I see what you mean about it not being low cal!!!! But I bet it tastes amazing!!!!

Oh well, you only live once -- eat right, exercise, die anyway..... so why not indulge every now and then!? :D

The Chef I worked with for many years claimed that to get the goodnes out of Spinach you must have egg with it. She was trained in the old school in Germany and she said that there is something in the egg that helps you absorb the iron from the spinach and that is why you always see them together. I have no idea if it is true but if you saw her you would know better than argue with her. She was great but man she could get her point across and make grown men cry with just a look.

okay so if you want to reduce the fat but still have the bacon and spinach combo...try this...

I bag of baby spinach
I package of bacon bits
half a box of croutons
1 english cucumber cut in small chunks
and low fat ranch dressing......

my kids and I love this salad.....you can also add some olives ( sounds odd but it works).............or change up the dressing to greek/feta.........

the bacon bits and spinach work well together...............

I am sure it is not as good as using real bacon and its fat...but this is quick and probably has slightly less calories................. :D

I often use this recipe...less bacon fat.

8 slices bacon
2 Tbsp. bacon drippings
8 cups spinach, stems removed
3 hard cooked eggs, grated
2 chopped green onions

Dressing:
1 garlic clove, minced
2 Tbsp. cider or red wine vinegar
1 tsp. sugar
1/2 tsp. salt
1 tsp. dry mustard
1/2 tsp pepper
6 Tbsp. vegetable oil

Instructions:
To make dressing, combine ingredients and refrigerate.
To make salad, cook bacon, drain and crumble. Heat drippings, add dressing and bacon. Pour this mixture while hot over salad fixings and serve at once on individual plates.

I am going to try your recipe, it sounds good, and I love baby spinach. But I think I'll try to omit the fat, :D
