Painting the ceiling is never fun but I was lucky, in my case there is a slightly dropped ceiling(aprox.1/2") so I just painted the wall and the cove to the edge of the lower part, about 7" in from the wall. There is a great gadget on the market which would be perfect for your job, it's a lazer level, you set it up in the middle of the room and it projects a red light/line all around the room at whatever level you desire.
Thank you so much for you info!
Was this a diffcult job? And what is the best way to measure the ceilings so everthing is even?

We also have a relatively small space and cove ceilings (but no mouldings), our walls were painted about 10" below the ceiling level. I recently decided to paint up over the ceiling, it really visually raised the height of the ceiling and made the room seem bigger. I know this is exactly the opposite of what you are thinking of doing but I thought I'd warn you that it might make your ceiling look lower and room smaller, just something to keep in mind
