THere is a great Greek pasta salad in the Crazy Plates Cookbook. My friend introduced it to me and now I make it all the time. Even my picky in-laws like it!
If you have the cookbook, give it a try.

Use cooked vermicelli or spaghetti.
Dressing:
1/3 c. soya sauce
1/4 c. white wine vinegar
2 TBsp chili sauce
2TBsp sugar
2TBsp sesame opil
1" fresh ginger grated
4 garlic cloves minced
2 tsp or less chili flakes
1/4 c veg oil
Whisk all this together in a bowl except oil which you whisk and add last in a slow drizzle. Makes 1 1/2 cups.
Toss with pasta , grated carrot and chopped green onions. This dressing can be stored in firg a few days ahead as tastes it better.
I have no recipe but here is what I do:
cook pasta and while warm add :
chopped celery, green/red paper, grated carrot, black olives (sliced in can)plus any other vegs you like.
Then the dressing I pour over while pasta is warm too so it soaks into pasta.
Dressing:
mayo, sour cream, dry mustard, Worcheshire sauce. I just play around with last 2 ingredients until it has the zing I want. Then pour over pasta and leave overnight covered in frig. You can grate hard boiled eggs over before you serve or any fresh chopped herb you like.
